Pumpkin Raisin Cookies

Servings 4 dozen

Ingredients

  • 4 cups whole wheat pastry flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 2 teaspoons cinnamon
  • 1 teaspoon ginger powder
  • 1/2 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • 1 can pumpkin 15 oz
  • 1 cup date syrup
  • 2 tablespoons milled flax seed
  • 2 teaspoons vanilla extract
  • 2 cups raisins
  • zest of 1 orange or 2 tsp dried orange zest, optional

Instructions

  • Preheat oven to 375 degrees.
  • Mix dry ingredients in a large bowl. Set aside.
  • Mix wet ingredients in a bowl.
  • Pour into dry ingredients and stir until blended.
  • Fold in raisins and orange zest, if desired.
  • Use about 2 tbsp of dough per cookie and spoon onto a cookie sheet (I use a small ice cream scoop).
  • Bake for 12 minutes, or until golden brown.
  • Cool on a wire rack.
