Zucchini Pancakes

  • 2 medium zucchini, grated
  • 1/2 cup whole wheat pastry flour
  • 2 tablespoons nutritional yeast
  • 2 tablespoons milled flax seed
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper


1. Combine all ingredients in a large mixing bowl and let sit 10 minutes.
2. Heat a large non-stick pan over medium heat.
3. Spoon 2-3 tbsp of the mixture onto griddle for each pancake.
4. Flip over when bottoms are golden brown and pancakes are set around the edges.
5. Continue to cook until other side is golden brown and middles are not gooey.
6. Makes about a dozen pancakes.
