Oatmeal Peanut Butter Chocolate Chip Cookies

  • 1 cup peanut butter
  • 1 cup pure maple syrup
  • 1 cup unsweetened applesauce
  • 2 teaspoons vanilla extract
  • 2 cups rolled oats
  • 2 cups whole wheat pastry flour
  • 1 teaspoon sea salt (1/2 tsp if your peanut butter has salt in it.)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup non-dairy chocolate chips


  • 1 cup chopped nuts (I prefer macadamias or walnuts)


1. Combine wet ingredients and milled flax seed in a large mixing bowl, until smooth. (I use a KitchenAid mixer.)
2. Combine dry ingredients, except chocolate chips and nuts, in another mixing bowl.
3. Add dry mixture to wet mixture and stir until just blended.
4. Stir in chocolate chips and nuts. Let sit.
5. Meanwhile, preheat oven to 375 degrees F.
6. Spoon batter onto baking sheet about 2 tbsp at a time. (I use a small ice cream scoop.)
7. Bake 12 minutes or until golden brown.
