Chickpea Avocado Salad

Ingredients

  • 1 1/2 cup chickpeas (garbanzos)
  • 1 avocado (diced)
  • 1 stalk celery (chopped)
  • 2 green onions (chopped)
  • 1/4 cup sweet pickle relish
  • 1/4 cup non-dairy plain yogurt
  • 1/2 teaspoon kelp flakes
  • 1 teaspoon black salt (or sea salt to taste)
  • black pepper (to taste)

Directions

1. Place chickpeas and avocado in a food processor. Pulse until desired consistency.
2. Spoon into a mixing bowl and stir in remaining ingredients.
