Cornbread

Ingredients

  • 1/2 cup unsweetened applesauce
  • 1/2 cup liquid sweetener
  • 1/2 cup non-dairy milk or water
  • 1 tablespoon milled flaxseed
  • 1 teaspoon apple cider vinegar
  • 1 cup cornmeal
  • 1 cup whole wheat pastry flour (or cornmeal for GF)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt

Optional

  • 1 jalapeno (minced)

Note

For stuffing: omit sweetener and increase non-dairy milk or water to 1 cup.

Directions

1. Preheat oven to 375 degrees F.
2. Mix together wet ingredients and flaxseed in a small mixing bowl. Set aside.
3. Mix together dry ingredients in a large mixing bowl.
4. Stir wet mixture into dry mixture.
5. Pour batter into a parchment lined 9x9 baking dish or a 12-muffin pan.
6. Bake for 20 minutes if in a baking dish or 15 minutes for muffins.
7. Let sit for 10 minutes before serving.
