Apple Fritter Muffins

Ingredients

  • 1 can light coconut milk, 13.5 oz
  • 12 Medjool dates, pitted
  • 1 teaspoon vanilla extract
  • 1 teaspoon apple cider vinegar
  • 3 cups whole wheat pastry flour
  • 1 1/2 teaspoon baking powder
  • 3/4 teaspoons baking soda
  • 1 tablespoon cinnamon
  • 1 teaspoon powdered ginger
  • 2 apples, diced

Directions

1. Preheat oven to 375F.
2. Meanwhile, combine coconut milk, dates, vanilla, and vinegar in a blender and process until smooth.
3. Combine dry ingredients in a large bowl.
4. Fold in wet mixture and apples, until well blended.
5. Spoon batter into a lined muffin pan.
6. Bake for 15 minutes.
