Quick and Easy Vegetable Soup (Vegan, Gluten Free, Oil Free)

Ingredients

  • 8 cups vegetable broth
  • 1 bag frozen peas and carrots
  • 1/2 bag frozen corn
  • 1 can kidney beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 onion, diced
  • 1 zucchini, diced
  • 2 tsp Italian seasoning
  • black pepper, to taste

Directions

Put all ingredients in a large pot. Bring to a boil, then cover and reduce heat.

Simmer until onions are soft.

Serves 6-8.
