Pumpkin Raisin Cookies
Ingredients
- 4 cups whole wheat pastry flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon sea salt
- 2 teaspoons cinnamon
- 1 teaspoon ginger powder
- 1/2 teaspoon allspice
- 1/4 teaspoon nutmeg
- 1 can pumpkin (15 oz)
- 1 cup date syrup
- 2 tablespoons milled flax seed
- 2 teaspoons vanilla extract
- 2 cups raisins
- zest of 1 orange (or 2 tsp dried orange zest), optional
Instructions
- Preheat oven to 375 degrees.
- Mix dry ingredients in a large bowl. Set aside.
- Mix wet ingredients in a bowl.
- Pour into dry ingredients and stir until blended.
- Fold in raisins and orange zest, if desired.
- Use about 2 tbsp of dough per cookie and spoon onto a cookie sheet (I use a small ice cream scoop).
- Bake for 12 minutes, or until golden brown.
- Cool on a wire rack.
