Oatmeal Raisin Cookies (Vegan and Oil Free)
- 2 bananas, mashed
- 1 tsp vanilla
- 1 1/2 cups rolled oats
- 1 cup whole wheat pastry flour
- 2 tbsp milled flax seed + 6 tbsp water
- 1 tsp cinnamon
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1 cup raisins
Preheat oven to 375 degrees F.
Combine all ingredients, except raisins, until well blended.
Stir in raisins.
Put spoonfuls of the batter onto cookie sheet. (I use a small ice cream scoop.)
Bake for 12 minutes, or until edges are browned.
Cool on a wire rack.
Makes 2 dozen.
