Peanut Butter Sandwich Cookies
Servings 18 sandwich cookies
Ingredients
For the Cookies:
- 1 1/2 cups date syrup
- 1 cup peanut butter
- 1 teaspoon vanilla extract
- 2 cups whole wheat pastry flour or whole white wheat flour or oat flour for gluten free
- 1 cup rolled oats
- 1 teaspoon cornstarch
- 1/2 teaspoon baking soda
For the Filling:
- 1/2 cup peanut butter
- 1/4 cup date syrup
Instructions
For the Cookies:
- Preheat oven to 400 degrees F.
- In a large bowl, cream together date syrup, peanut butter, and vanilla extract.
- In a medium bowl, whisk together remaining ingredients.
- Add dry mixture to wet mixture a spoonful at a time, until it is completely incorporated.
- For each cookie, use about 1 tablespoon of the dough, shape into a flat disk or peanut shape and place on a cookie sheet.
- Bake for 12 minutes or until golden brown.
- Cool completely on a rack.
For the Filling:
- Meanwhile, stir together filling ingredients.
- Once cookies are cool, sandwich the cookies together with about 1 teaspoon of the filling.
