Peanut Butter Sandwich Cookies

Servings 18 sandwich cookies


For the Cookies:

  • 1 1/2 cups date syrup
  • 1 cup peanut butter
  • 1 teaspoon vanilla extract
  • 2 cups whole wheat pastry flour or whole white wheat flour or oat flour for gluten free
  • 1 cup rolled oats
  • 1 teaspoon cornstarch
  • 1/2 teaspoon baking soda

For the Filling:

  • 1/2 cup peanut butter
  • 1/4 cup date syrup


For the Cookies:

  • Preheat oven to 400 degrees F.
  • In a large bowl, cream together date syrup, peanut butter, and vanilla extract.
  • In a medium bowl, whisk together remaining ingredients.
  • Add dry mixture to wet mixture a spoonful at a time, until it is completely incorporated.
  • For each cookie, use about 1 tablespoon of the dough, shape into a flat disk or peanut shape and place on a cookie sheet.
  • Bake for 12 minutes or until golden brown.
  • Cool completely on a rack.

For the Filling:

  • Meanwhile, stir together filling ingredients.
  • Once cookies are cool, sandwich the cookies together with about 1 teaspoon of the filling.
