Ingredients
For the Cupcakes:
- 1 1/2 cup whole wheat pastry flour
- 1/2 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 1/2 cups cold coffee
- 1/2 cup date sugar
- 1/2 cup unsweetened applesauce
- 1 teaspoon vanilla extract
For the Frosting:
- 2 cups raw cashews
- 1 cup water
- 1/4 cup coconut butter
- 2 tablespoons date sugar
- 2 tablespoons cocoa powder
- 2 teaspoons instant coffee granules
- 1 teaspoon vanilla extract
Instructions
For the Cupcakes:
- Preheat oven to 350 degrees F and line a cupcake pan with paper cupcake liners.
- Combine all dry ingredients in a large bowl.
- Add wet ingredients to dry mixture.
- Stir until well blended.
- Pour batter into lined cupcake pan.
- Bake for 20 minutes.
- Let cool completely.
For the Frosting:
- Meanwhile, combine all frosting ingredients in a blend and blend until completely smooth.
- Spoon into a piping bag or a plastic bag with a corner cut off and squeeze frosting onto cupcakes.
- Top each with a coffee bean, if desired.
- Keep cupcakes refrigerated until serving.
