Mocha Cupcakes

Ingredients

For the Cupcakes:

  • 1 1/2 cup whole wheat pastry flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 1/2 cups cold coffee
  • 1/2 cup date sugar
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract

For the Frosting:

  • 2 cups raw cashews
  • 1 cup water
  • 1/4 cup coconut butter
  • 2 tablespoons date sugar
  • 2 tablespoons cocoa powder
  • 2 teaspoons instant coffee granules
  • 1 teaspoon vanilla extract

Instructions

For the Cupcakes:

  • Preheat oven to 350 degrees F and line a cupcake pan with paper cupcake liners.
  • Combine all dry ingredients in a large bowl.
  • Add wet ingredients to dry mixture.
  • Stir until well blended.
  • Pour batter into lined cupcake pan.
  • Bake for 20 minutes.
  • Let cool completely.

For the Frosting:

  • Meanwhile, combine all frosting ingredients in a blend and blend until completely smooth.
  • Spoon into a piping bag or a plastic bag with a corner cut off and squeeze frosting onto cupcakes.
  • Top each with a coffee bean, if desired.
  • Keep cupcakes refrigerated until serving.
