Coffee Cake (Vegan and Oil Free)

Ingredients

  • Topping:
  • 1 cup whole wheat pastry flour
  • 1/3 cup date sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup applesauce
  • Cake:
  • 3/4 cup non-dairy milk
  • 1 tsp apple cider vinegar
  • 1/3 cup date sugar
  • 1 banana
  • 1 tsp vanilla extract
  • 1 1/3 cups whole wheat pastry flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Optional Filling:
  • Fruit spread and/or non-dairy cream cheese
  • Powdered sugar, optional

Directions

Preheat oven to 375 degrees and line a 9×9 baking dish with parchment paper.

Mix topping ingredients in a small bowl with your hands, until crumbly. Set aside.

In a large bowl, mash the banana. Add remaining ingredients and whisk until smooth.

Pour batter into lined baking dish.

If using, add small spoonfuls of your favorite fruit spread (shown above with raspberry) and/or non-dairy cream cheese on top of the batter.

Evenly sprinkle the topping mixture over the batter and gently pat down.

Bake for 35-40 minutes, or until a toothpick comes out clean.

Let cool for at least 1/2 an hour. Lightly sprinkle with powdered sugar, if desired, and serve.

Serves 6.
