Chocolate Peanut Butter Pie (Vegan, Gluten Free, and Oil Free)

Chocolate Peanut Butter Pie

For the Crust:

  • 1 cup oats
  • 1/3 cup cocoa powder
  • 6 pitted Medjool dates
  • 2-3 tablespoons water

For the Filling:

  • 1 box silken tofu
  • 1 cup peanut butter
  • 6 pitted Medjool dates
  • 1 teaspoon vanilla extract

For the Topping:

  • 2 tablespoons cocoa powder
  • 2 tablespoons date syrup
  • 1/4 cup coconut butter


For the Crust:

  • In a food processor, combine all Crust ingredients, except water, and process until it is a coarse powder.
  • Add just enough water to the oat mixture until it holds together when pressed.
  • Dump the oat mixture into a 9" cake or spring-form pan and cover the bottom evenly by pressing firmly with your fingers.
  • Set crust aside.

For the Filling:

  • Combine all Filling ingredients in a food processor and blend until smooth.
  • Pour into pie crust and spread evenly with a spatula.
  • Put in the refrigerator to set.

For the Topping:

  • Whisk topping ingredients together until smooth.
  • Pour chocolate mixture over pie filling and spread evenly with a spatula.
  • Place pie back in the refrigerator and chill for at least one hour, or until filling and topping are completely set.
