Chocolate Pudding or Mousse (Vegan, Gluten Free, Oil Free)
- 1/4 cup cocoa powder
- 2 boxes Mori Nu extra firm silken tofu or two avocados or 2 cups sweet potato
- 1 teaspoon vanilla extract
- 1/2 cup date sugar 1/4 cup if using sweet potato
- 1 bag dairy free chocolate chips optional alternative
- Combine all ingredients in a high speed blender or food processor and blend until smooth.
- To make mousse, instead of pudding, replace the sweet potato and date sugar with melted chocolate chips. Blend the tofu and vanilla together, then add the melted chocolate chips and blend until completely incorporated.
- Refrigerate before serving.
