Braised Broccoli Rabe (Vegan, Gluten Free, and Oil Free)
- 1/2 cup vegetable broth or water
- 1/4 cup dry white wine
- 4 cloves garlic, minced
- 1/4 tsp crushed red pepper
- 1 bunch broccoli rabe (rapini)
- black pepper to taste
Cut ends off of the broccoli rabe and discard.
Cut broccoli rabe into 1 1/2 inch pieces.
Add broth (or water), wine, garlic, and red pepper to a frying pan.
Broil to a boil.
Add broccoli rabe, cover, and reduce heat.
Simmer for 20-30 minutes, stirring occasionally.
Season with salt and pepper and serve.
