Baked Scrambled Tofu in Avocado Cups with Hollandaise Sauce (Vegan, Gluten Free, and Oil Free)

Ingredients
- 4 ripe avocados
- 14 oz extra firm tofu
- 3 tbsp nutritional yeast
- 1 tbsp apple cider vinegar
- 1 1/2 tsp Dijon mustard
- 1 tsp turmeric
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp black pepper
Directions
Preheat oven to 350 degrees.
Slice avocados in half, remove pit, scoop out some of the flesh to make a cup, and place in a baking dish.
Crumble tofu into a bowl and mix in remaining ingredients with your hands or a fork.
Spoon tofu mixture into avocado cups.
Bake for 25 minutes or until tofu is slightly browned.
Meanwhile, make hollandaise sauce:
- 1/4 cup whole wheat pastry flour or GF flour
- 2 tbsp nutritional yeast
- 1/4 tsp turmeric
- 1/8 tsp cayenne
- 3/4 cup water
- juice of 1/2 lemon
Combine all ingredients in a small sauce pan and whisk over medium heat until thick and bubbly.
Spoon over tofu and garnish with paprika, if desired.
Serves 4-8.
